SSL: Snowed In With Nemo

Yesterday was so exciting that I completely forgot to finish this Saturday Short List. The blizzard Nemo hit between Friday night and Saturday morning, dropping over two feet of snow on Boston, and often more in places because of the snow drifts and 4+ foot piles from plows along the sidewalks. Yesterday we shoveled out the car and front of the apartment, played in the snow, went for a walk along the Charles River (snowshoes would have been useful for that, but walking through two feet of snow was a great workout!), and drank lots of hot chocolate. It was fun being snowed in, but we’ll see how much fun getting to work is tomorrow morning depending on the MBTA trains and buses…

So today’s Short List features great recipes for a snowy weekend:

I love this: How to make your own waffle mix from Simple Bites, so next time there’s a snow storm, you’ll be ready for breakfast. My mom always had a batch of pancake mix in the pantry when I was growing up.

This recipe for Roasted Beets, Turnips, and Carrots from Beantown Baker is a great reminder to cook seasonally and enjoy some beautiful root veggies.

Eat.Live.Blog’s Slow Cooker Winter Bacon Beef Stew sounds perfect for a cold day. I’m always looking for hearty slow cooker recipes, so I’m holding on to this one.

Honey-Bourbon Toddy from Bon Appetit. Nothing like a yummy drink when you’re snowed in.

We can’t forget dessert: Beignets from Tracey’s Culinary Adventures look so light and delicious.

    Glad you had fun in the snow! We finally finished digging out our cars today. Thanks for including my stew, it is hearty and yummy for sure!
