We’re on to Day 2!
First, here’s a re-cap…
Day 1: 1 cup flour (with sprinkle of corn flour), 1 1/2 cup warm water. Mix until homogeneous consistency (similar to cream of wheat), place in warm location.
And…Day 2: 1 cup flour (all white), 1 cup warm water, 1 teaspoon of granulated sugar to the mixture from yesterday, mix. I transferred everything to a larger bowl because I’m planning for it to rise a bit, eventually.
A good tip to remember – use a glass or plastic container, as metal will affect the flavor. Using plastic, for some reason, doesn’t seem very healthy to me, so I’m using glass. ALSO, leave the top slightly off so there is space for the gasses to escape. I’ve seen a bunch of options, including poking holes in the top or placing cheesecloth over the top, but I’m just placing the top on without sealing it.
