Look familiar? I replicated the Vaquero Hash from The Painted Burro!
It’s a very easy recipe – throw together onions, beans, corn, and diced green and red pepper in a pan. Saute with seasoning of your choice (I used turmeric, Armenian 7 spice blend, and cayenne pepper, salt, and pepper). Be patient and let the ingredients caramelize a bit. Top with a fried egg.
Nopales (cactus) are in the Vaquero Hash at The Painted Burro and while green pepper isn’t exactly the same, the result is a very similar texture and flavor.
