Veggie Hash topped with fried egg to replicate The Painted Burro's Vaquero Hash

Look familiar? I replicated the Vaquero Hash from The Painted Burro!

It’s a very easy recipe – throw together onions, beans, corn, and diced green and red pepper in a pan. Saute with seasoning of your choice (I used turmeric, Armenian 7 spice blend, and cayenne pepper, salt, and pepper). Be patient and let the ingredients caramelize a bit. Top with a fried egg.

Nopales (cactus) are in the Vaquero Hash at The Painted Burro and while green pepper isn’t exactly the same, the result is a very similar texture and flavor.

You read my mind! I have a veggie hash coming up later this week on my blog too. But it I am coming from a more corned beef hash style hash…Looks delish!

That sounds amazing, can’t wait to see it!

I was so impressed with The Painted Burro – those flavors have been tempting me ever since.

This looks delicious, maybe it would be good with a toasted/grilled piece of bread underneath it all.
