Homemade Spicy Home Fries

Well-made home fries are a great addition to even the most simple breakfast.  This morning my boyfriend made me an egg over easy (the yolk was moist but not dripping) that I ate with home fries and a glass of Ruby Red Grapefruit Juice.  A wonderful breakfast.  Plus, if you make a large batch of home fries on a Sunday morning, for example, you could have quick, yummy breakfasts on Monday, Tuesday, and Wednesday.

I like to bake the potatoes first in the oven until they’re almost soft and then fry for about five minutes on the stove.  A slightly crispy potato is a necessity. Once you master these, you’ll never need to suffer through mushy diner homefries again.

Homemade Spicy Home Fries with Onions

Ingredients (for 5-6 side servings)

  • 5 potatoes (I used Yukon Gold)
  • vegetable oil
  • ground black pepper to taste
  • chili powder* to taste
  • 2 onions
  • 1 Tablespoon Chili Garlic sauce (I used Hoy Fong)
  • 1 teaspoon Sriracha sauce (Hoy Fong)
  • salt to taste
  • grated sharp cheddar cheese

*The chili powder I used is made up of ground chili pepper, cumin, oregano, garlic powder, and salt – so if you don’t have this seasoning, just use a combination of ground chili peppers, cumin, and whatever else sounds good to you.

Instructions

Preheat oven to 375 F.  Peel and cut potatoes.

Place potatoes on baking sheet (one with sides so the oil won’t run off) and drizzle vegetable oil over top.  Toss potatoes until slightly covered in oil (so they won’t stick).  Add black pepper and chili powder, toss again.  Place in oven and gently toss as needed (about every eight to ten minutes).

Peel and chop onions.  In large pan (I used a wok), add 1 or 2 T of vegetable oil, turn stove on to low.  When oil is hot, add onions.  Toss every few minutes.

Check potatoes, toss to be sure they’re not sticking to pan.  After 20-30 minutes of cooking potatoes and mixing them a few times, transfer potatoes to pan where onions are sweating (becoming soft, but not brown).  Turn heat to medium, mix potatoes and onions together.

Add Chili Garlic and Sriracha sauces, mix again.  Cook for about five minutes until combined, then add cheese and salt to taste.  Mix again and serve.  I like to dip them in a little ketchup.
